AWESOME PASTA SALAD

I don’t know about you but I know that when I am preparing for a few days or even an afternoon of cruising the last place I want to be is in the kitchen with a complicated, lengthy recipe.  So in the spirit of getting out into the sunshine and onto the water faster, here’s a terrific pasta salad recipe that is easy, is full of flavour and will feed a bunch of hungry boaters. 

    Ingredients
    1 (16 ounce) package fusilli (spiral) pasta
    3 cups cherry tomatoes, halved
    1/2 pound provolone cheese, cubed
    1/2 pound salami, cubed
    1/4 pound sliced pepperoni, cut in half

    Instructions
    1 large green bell pepper, cut into 1 inch pieces
    1 (10 ounce) can black olives, drained
    1 (4 ounce) jar pimentos, drained
    1 (8 ounce) bottle Italian salad dressing

    Prep – 30 m
    Cook – 10 m
    Ready In – 40 m

    Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente. Drain, and rinse with cold water.
    In a large bowl, combine pasta with tomatoes, cheese, salami, pepperoni, green pepper, olives, and pimentos. Pour in salad dressing, and toss to coat.

Watermelon MargaritaWATERMELON MARGARITA

Made with frozen watermelon, tequila, and our classic Margarita Cocktail Mixer, you’ll want to keep extra watermelon on-hand in the freezer in order to blend a batch of this fruity summertime refresher at a moment’s notice.

Ingredients
    3 cups (750 mL)  cubed seedless watermelon
    ½ cup (125 mL)   PC BLACK LABEL MARGARITA COCKTAIL MIXER
    ¼ cup (50 mL)  tequila
    ¼ cup (50 mL)  orange-flavoured liqueur (such as Grand Marnier or Cointreau)
    1 ¼ cups (300 mL)  ice cubes
    1 lime,  cut in thin wedges
    Kosher  salt

 Instructions
    Place watermelon cubes in resealable freezer bag; freeze for 2 hours.
    In blender, combine frozen watermelon cubes, margarita mix, tequila, orange liqueur and ice cubes; blend until smooth.
