On a gorgeous sunny May evening recently, the Canadian Yachting staff were treated to an evening sail aboard Lynn and Pat Lortie’s Adamant 1, complete with delicious snacks and Lynn’s custom audio soundtrack, which may have taken us back a few years.
After a long winter and a cool, wet spring here in Midland, ON, it was such a welcome change to be out on the Bay on a calm, warm evening. Prior to setting out from the Midland Bay Sailing Club we enjoyed a glass of wine and a selection of appetizers that were all prepared using the Carnivore Club’s Meat of the Month box. The meats that were offered in this particular selection ranged from a Sweet Coppa to a sliced Prosciutto to a Hot Sopressata. (Please see the end of this article for a full description of detail on the meats etc.) We created some appetizers that would both allow the flavours of the meats to shine through as well as ones that were easy to make and transportable onboard the sailboat.
The flavours of the different cured meats were all distinct on their own and all offered something different to the palate. The hot Sopressata had a nice brand of heat that was not overpowering but really added to its flavour. The sliced prosciutto we had paired with some fresh cantaloupe and it made a delicious marriage of complementary flavours. The sweet Sopressata went deliciously with a grape tomato, a piece of bocconcini cheese and a basil leaf while the sweet Coppa took the flavour lead when combined with a button mushroom and a slice of cucumber. The Milano and Genoa Chubs were left up to individuals to combine with crackers, red pepper jelly, savoury spreadable goat cheese and some wasabi or salmon flavoured caviar.
Because it was such a calm day on the water we headed out under power with the sails still furled. Lynn anchored us out in Gawley Bay where we continued sampling the snacks and admiring the 360 degree view. It was race night at the Sailing Club so not far off to the East the boats were queuing up to attempt a race without much wind to leverage.

This is a refreshing, English / Indian-inspired twist on leftover turkey — a nice change of pace after a traditional Thanksgiving dinner. Dried cranberries take the place of more traditional grapes and lend a little contrasting sweetness, and cilantro and lime play out the tropical theme. Using more yogurt than mayonnaise keeps the salad light. (Substitute lowfat Greek yogurt for regular lowfat yogurt to avoid the draining step.) Serves 2 to 4

Good food is an important part of the cruising experience for our crew – just as important as it is at home. When we traded our 27’ sailboat for a 32’ trawler, a big attraction of the new boat was its well-equipped galley, extensive stowage, and refrigeration. Hog heaven, if you will, compared to the tiny galley and icebox on the sailboat.
But as we prepared for our first extended foray up the BC coast, we realized we needed one more component in our galley toolset: a freezer. We like our fish and seafood but we’re not avid fishers; a freezer would allow us to pack along our favourite “catch.” Same with meats, which are scarce and
I use this recipe a lot aboard Distant Shores since it is attractive, flavourful and easy to prepare at a moment’s notice from mostly canned and bottled goods that can be stored on board long-term. Adjust amounts slightly to suit the size and type of serving dish you choose to serve it in. I use a 6″ x 8″ x 2″ glass casserole dish (pictured) to show off the layers of ingredients. Everything is prepared in the dish you serve it in so preparation doesn’t mean a lot of dishes to wash up afterwards. Not only does this save water, it leaves you time to relax and enjoy your time on the boat.

Ron and Pat Reder started out in October 1984 across the road from where they are right now on the Bayfield River in Bayfield ON. The store front was about 10 x 20 and the rest of that side of the building was a stock room, wood finishing room, then behind that was more back stock and the lunchroom. Expanding every few years for the store front, then moving over to this new building five years ago, this year with Adam, Shelley, and Holly are carrying on the business.
