Cranberry Goat Cheese Stuffed Chicken

Prepare this stuffed chicken breast recipe from beginning to on-the-table in 15 minutes!

Ingredients

    2 chicken breasts
    1 tbsp Enzo Olive Oil
    1 tsp fresh rosemary (chopped)
    ½ tsp black pepper
    ½ tsp salt
    ¼ cup dried cranberries
    ¼ cup goat cheese (crumbled)

Instructions

Begin by butterflying the chicken breasts (slicing through the middle, but not all the way through.)
    Brush each side with olive oil and sprinkle with fresh rosemary, salt and pepper.
    Fill each chicken breast with goat cheese and cranberries.
    Fold over and place on the barbecue.
    Close and grill until perfectly cooked though.
